Keto Blueberry Coffee Cake made using our yellow cake mix ✨Perfectly soft & moist cake bursting with fresh blueberries, layers of buttery cinnamon streusel, and drizzled with our vanilla frosting. This recipe will yield one 8x8-inch pan of coffee cake.
INGREDIENTS:
- 1 bag Fit Bake yellow cake mix, prepared
- 1/2 cup blueberries
- 2 tbsp unsalted butter, softened
- 3/4 cup blanched almond flour
- 3 tbsp granulated sugar-free sweetener
- 1 tsp cinnamon
- 3 tbsp Fit Bake Vanilla Buttercream Frosting
INSTRUCTIONS:

Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.

Prepare yellow cake mix batter according to package instructions (ultra-rich & moist style is recommended for this recipe!) Fold in blueberries.
- Combine butter, almond flour, sweetener, and cinnamon until a crumbly mixture forms.

Pour half of batter into the lined pan and spread evenly, top with half of crumble mixture, then repeat with remaining batter and crumble.

Bake for 28-30 minutes or until toothpick inserted into center comes out with moist crumbs. Allow to cool.

Drizzle with vanilla frosting, warming frosting gently if needed to achieve a drizzle texture. Slice, and enjoy!
