Keto-friendly carrot cake (or cupcakes) made easy using our versatile yellow cake mix 🥕🐰🍰

Perfectly moist with authentic carrot cake flavor and texture. Makes one 8x8-inch cake, or 9-12 cupcakes.

INGREDIENTS:

Cake:

  • 1 bag Fit Bake yellow cake mix
  • Spices: 1 tsp cinnamon, 1/2 tsp ginger, 1/8 tsp nutmeg
  • 3/4 cup finely grated carrots
  • Optional add-ins: 2 tbsp chopped walnuts or pecans, shredded coconut, etc.

Cream Cheese Frosting:

Or to make your own:

  • 1 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar-free sweetener
  • 1/2 tsp vanilla extract

INSTRUCTIONS:

  1. Stir spices into dry yellow cake mix. Prepare cake batter according to package instructions in style of your choice. Fold in grated carrots, and any optional add-ins if desired. 

  2. Bake according to package instructions. For cupcakes, line a cupcake tin with paper liners and bake at 350 for 17-20 minutes. Allow to cool completely before frosting.

  3. Frost with our pre-made cream cheese frosting. Or to make homemade frosting: Allow cream cheese and butter to come to room temperature, and then beat with electric mixer until smooth. Add sifted powdered sweetener and beat until thick and fluffy. Add vanilla.

  4. Frost, and enjoy!
