Keto-Friendly Cookie Dough Cupcakes 🍪✨Super moist low-carb cupcakes made using our yellow cake mix, topped with a homemade keto cookie dough buttercream. Cookie dough lovers, this one's for you!
INGREDIENTS:
Cupcakes:
- 1 bag Fit Bake yellow cake mix
- 2 tbsp sugar-free chocolate chips
Cookie Dough Buttercream Frosting:
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered sugar-free sweetener
- 1/4 tsp vanilla extract
- 1/4 tsp blackstrap molasses (for color)
- 1/8 tsp salt
- 2 tsp coconut flour
- 1 1/2 tbsp sugar-free chocolate chips
INSTRUCTIONS:

Prepare yellow cake batter according to package instructions, then stir chocolate chips into batter. Distribute paper liners in a cupcake pan and distribute batter evenly into 9-12 cupcakes. Bake at 350°F for 17-20 minutes. Allow to cool.

Frosting: Combine first four ingredients and stir until smooth. Add salt to taste, then add coconut flour until desired texture is reached. Mix in chocolate chips.
