Keto-Friendly Cookie Dough Cupcakes 🍪✨Super moist low-carb cupcakes made using our yellow cake mix, topped with a homemade keto cookie dough buttercream. Cookie dough lovers, this one's for you!  

INGREDIENTS:

Cupcakes:

Cookie Dough Buttercream Frosting:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar-free sweetener
  • 1/4 tsp vanilla extract
  • 1/4 tsp blackstrap molasses (for color)
  • 1/8 tsp salt
  • 2 tsp coconut flour
  • 1 1/2 tbsp sugar-free chocolate chips

INSTRUCTIONS:

  1. Prepare yellow cake batter according to package instructions, then stir chocolate chips into batter. Distribute paper liners in a cupcake pan and distribute batter evenly into 9-12 cupcakes. Bake at 350°F for 17-20 minutes. Allow to cool. 

  2. Frosting: Combine first four ingredients and stir until smooth. Add salt to taste, then add coconut flour until desired texture is reached. Mix in chocolate chips.

  3. Frost cooled cupcakes, and enjoy!
