Keto Gingerbread Cake! Soft, moist cake with the cozy, warming flavors and spices of gingerbread. It doesn't get much better than this! Choose from a homemade maple cream cheese frosting, or use our pre-made cream cheese frosting for the ultimate convenience. This cake will be ready in no time! This recipe will yield one 8x8-inch pan of cake, or make 9-12 cupcakes. 

INGREDIENTS:

  • 1 bag Fit Bake yellow cake mix
  • Gingerbread spices: 1 tsp ginger, 1 tsp cinnamon, 1/2 tsp cloves
  • 3 tbsp blackstrap molasses
  • 3 large eggs
  • 1/4 cup avocado oil

Maple cream cheese frosting:

  • 1 cup cream cheese
  • 1/4 cup salted butter
  • 1/2 cup powdered sugar-free sweetener
  • 2 tbsp sugar-free maple syrup
  • 1/2 tsp vanilla extract

INSTRUCTIONS:

  1. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper. 

  2. Combine yellow cake mix and gingerbread spices in a mixing bowl. Add molasses, eggs, and oil, and stir until combined. 

  3. Spread cake batter into lined pan.

  4. Bake for 25-30 minutes, or until toothpick inserted into center comes out with moist crumbs. Allow to cool completely.

  5. Once cooled, spread evenly with cream cheese frosting. To make homemade frosting, allow cream cheese and butter to come to room temperature then beat until combined. Add remaining ingredients and beat until smooth and creamy.

  6. Slice, and enjoy!
