Keto-friendly strawberry cupcakes combining the buttery flavor of our yellow cake with the fresh, summery flavor of strawberries 🧁🍓Makes one 8x8-inch cake, or 9-12 cupcakes.
INGREDIENTS:
Cake:
- 1 bag Fit Bake yellow cake mix
- 2-3 tbsp sugar-free strawberry flavored chips (optional)
Strawberry Frosting:
- 1 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 3/4 cup powdered sugar-free sweetener
- 2 tbsp sugar-free strawberry syrup
- 1/4 tsp natural pink food coloring powder
INSTRUCTIONS:

Prepare cake batter according to package instructions in style of your choice. Stir in strawberry chips.

Bake according to package instructions. For cupcakes, line a cupcake tin with paper liners and bake at 350 for 17-20 minutes. Allow to cool completely before frosting.

Frosting: Allow cream cheese and butter to come to room temperature, and then beat with electric mixer until smooth. Add sifted powdered sweetener and beat until thick and fluffy. Add strawberry syrup and food coloring, and beat again until smooth and combined.
