INGREDIENTS:
Cake:
- 1 bag FitBake yellow cake mix
- Spices: 1 tsp cinnamon, 1/2 tsp ginger, 1/8 tsp nutmeg
- 3/4 cup finely grated carrots

Optional add-ins: 2 tbsp chopped walnuts or pecans, shredded coconut, etc.
Cream Cheese Frosting:
Or to make your own:
- 1 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar-free sweetener
- 1/2 tsp vanilla extract
INSTRUCTIONS:

Stir spices into dry yellow cake mix. Prepare cake batter according to package instructions in style of your choice. Fold in grated carrots, and any optional add-ins if desired.

Bake according to package instructions for cake. For cupcakes, line a cupcake tin with paper liners and bake at 350 for 17-20 minutes. Allow to cool completely before frosting.

Frost with our pre-made cream cheese frosting. Or to make homemade frosting: Allow cream cheese and butter to come to room temperature, and then beat with electric mixer until smooth. Add sifted powdered sweetener and beat until thick and fluffy. Add vanilla.
